My new favorite vegan sandwich....
-sliced bread (it's really good toasted too)
-Tofutti's "better than cream cheese"
-sun dried tomatoes
-sliced cucumbers
-baby spinach leaves
... you can find the Tofutti (vegan cream cheese) at Trader Joe's.
